A delicious and refreshing recipe for watermelon and quinoa salad!

Ingredients

  • Cooked Quinoa – ½-¾ cup

  • Watermelon Pieces – 1 cup

  • Onion – 1 small, sliced

  • English Cucumber – 1, diced

  • Crumbled Feta Cheese (optional)

  • Chopped Walnuts, Almonds and Mixed Seeds

  • Fresh Mint Leaves

  • Vinaigrette Dressing
  • Olive Oil – 1/4 cup

  • Vinegar – 2 tbsp

  • Honey/Maple Syrup – 1 tsp

  • Garlic – 2-3 cloves, minced

  • Salt – 1/4 tsp (adjust as per taste)

  • Pepper Powder – 1/8 tsp (adjust as per taste)

Directions

  • For the dressing, add the olive oil, vinegar, honey or maple syrup, garlic, salt and pepper into a bottle, close the lid tightly and shake it well to blend it all together. Any extra dressing can be stored in the same bottle, close it tightly and keep it refrigerated.
  • Into your mixing bowl, add the cooked quinoa, watermelon pieces, sliced onion and cucumber pieces.
  • Add some of the dressing and toss it well. Garnish with some crumbled cheese (if using), chopped nuts and seeds and fresh mint leaves.
