Ingredients

  • Eggs – 4

  • Onion – 1, chopped fine

  • Carrot – a small piece, chopped fine

  • Capsicum – a small piece, chopped fine

  • Green Chilli – 2, chopped fine

  • Coriander Leaves – 1 tbsp, chopped fine

  • Instant Cooking Oats – 1 tbsp

  • Salt and Pepper as per taste

  • Oil for cooking

Directions

  • Whisk eggs together in a bowl.
  • To this, add the onion, capsicum, green chilli, coriander leaves, oats, salt and pepper and whisk well.
  • Add oil to a pan and once it heats up, add the egg mixture. Let it cook on low-medium heat till the bottom is slightly brown and the edges look done.
  • Flip and cook the other side also. Serve hot with a side of toasted bread and ketchup.
