Burfis are a common mithai or sweet made during festivals in India, just like kheers, halwas and laddus. Peanut Burfi probably might not be one of the common burfis made, but definitely will top the list among one of the most easiest burfis you can make. You can call it an Indian sweet fudge made of peanuts and jaggery. Peanut Burfi is a good alternative to Kaju Katli both cost-wise and health-wise. Peanuts are cheaper and are rich in nutrients and also gluten-free.

You can make a big batch of this barfi and store it in the refrigerator to enjoy them for a couple of days. This is an excellent and healthy option to gift your friends too. Since there is no refined sugar added to make these burfis, they can be enjoyed guilt-free.

I like to make a batch of these burfis and serve it after meals as a sweet and sometimes I do pack these in the snack box for kids too.

An easy to make and healthy Peanut Burfi recipe

Ingredients

  • Peanuts – 1 cup, roasted and deskinned

  • Hot Milk – 1 cup

  • Jaggery Powder – 1/2 cup

  • Salt – 1/8 tsp

  • Ghee – 1 tbsp

  • Cardamom Powder – 1/8 tsp (optional)

  • Crushed Peanuts for sprinkling on top

Directions

  • Add hot milk to the peanuts and keep it aside for 10 min.
  • Add the peanuts to the blender along with some milk and blend it. Add milk little by little till the peanuts are blended well into a smooth paste.
  • Transfer the blended peanut mixture to a pan and cook this on low flame till the mixture thickens.
  • Add jaggery powder and salt and cook till it thickens further. Add ghee and cardamom powder and cook till it leaves the sides of the pan and comes together.
  • Transfer to a greased and lined dish. Sprinkle some crushed peanuts on top and let it cool down.
  • Refrigerate the burfi till set and then cut into pieces and serve.
