Ingredients

  • Olive Oil – 1 tbsp

  • Garlic – 2-3 cloves, thinly sliced

  • Tomato – 2 medium, chopped

  • Basil Leaves – a few, chopped

  • Vinegar – 1/2 tbsp

  • Salt – as per taste

  • English Cucumber – 2

  • Feta cheese and basil leaves for garnish

Directions

  • Heat oil in a pan, add garlic and fry till golden brown. Keep it aside to cool down.
  • Into a bowl, add chopped tomatoes, basil leaves, vinegar, salt and the oil with fried garlic. Mix it well.
  • Cut cucumber into about a cm thick piece and place the tomato mix on it. Else, slice cucumbers into about an inch thick piece and scoop out a little from the centre. And then put the tomato mix into it.
  • Top with some crumbled feta cheese and basil leaves and serve as a cold appetizer.
