Rice Tikki: A Flavorful Twist to Leftover Rice!

Ingredients

  • Onion – 1 medium

  • Green Chilli – 2

  • Carrot – 1 medium

  • Ginger – 1/2-inch

  • Coriander Leaves

  • Leftover Cooked Rice – 2 cups

  • Gram Flour – 1/4 cup

  • Salt – 3/4 tsp

  • Chilli Powder – 1/2 tsp

  • Coriander Powder – 1/2 tsp

  • Amchur Powder – 1/2 tsp

  • Chaat Masala – 1/2 tsp

  • Cumin Powder – 1/4 tsp

  • Turmeric Powder – 1/8 tsp

  • Oil for cooking

Directions

  • Into a chopper, add the onion, green chilli, carrot, ginger and coriander leaves. Alternately, you can chop everything fine.
  • Add the chopped vegetables to the cooked rice along with the gram flour, salt, chilli powder, coriander powder, amchur powder, chaat masala, cumin powder and turmeric powder. Mix it all well till you get a soft mix.
  • Shape this into balls and then flatten them into tikkis.
  • Heat some oil in a pan and pan-fry the tikkis till golden-brown on both sides.
  • Serve with any dip of your choice.
