Thai Vegetable Salad is a vibrant and refreshing salad that is popular around the world. This salad is a great way to enjoy a variety of fresh vegetables, herbs, and spices, all tossed in a zesty and peanuty dressing that combines sour, sweet, salty, and spicy flavors.

To make this salad even more healthier, I have added sprouted green gram in this. It adds a raw crunch to the salad which you will love if you like having raw sprouts. To complement the flavours of the ingredients used in this salad, I have used a creamy peanut butter dressing. You can warm the peanut butter or even add some warm water to adjust the consistency of the dressing.

The peanut butter dressing can be made using store bought or home made peanut butter. You can make spicier and tangier by increasing the quantity of the citrus flavours and red chilli flakes in the dressing, The dressing can be prepared in advance and kept refrigerated for a week. You can make changes to the ingredients of this salad based on your personal preference and choice.

Try out this Thai Vegetable Salad recipe with a peanut butter dressing.

Ingredients

  • Lettuce – 1 cup, shredded

  • Green Gram Sprouts – ½ cup (optional)

  • Carrots – ½, thinly sliced

  • Red Bell Pepper – ½, thinly sliced

  • Yellow Bell Pepper – ½, thinly sliced

  • Cucumber – ½, thinly sliced

  • Chopped Coriander Leaves

  • Roasted Peanuts and Sesame Seeds for garnish

Directions

  • For the dressing, add the peanut butter, vinegar, soy sauce, lemon juice, honey, garlic, ginger, red chilli flakes, salt and pepper in a bowl and whisk it till well combined. Any extra dressing can be stored in a bottle with a tight lid and refrigerated.
  • In a bowl, add the lettuce, sprouts, carrots, red and yellow bell peppers, cucumber and coriander leaves along with some of the sweet chilli dressing.
  • Toss it all well.
  • Transfer it to your serving plate and top it up with some peanuts and sesame seeds and serve.
