Maybe it’s because I always enjoyed a sandwich in my tiffin as a kid, or maybe it’s because it truly is the perfect vessel for any number of delicious ingredients, but I love a good sandwich. I crave good sandwiches. Sometimes, all I want to make is a sandwich and there’s no reason to keep that relegated to lunchtime.

This Grilled Chicken Club Sandwich is BIG. If I’m enjoying it for lunch, I can have a full sandwich. But if I am having this for my dinner and since I like to keep dinner light, half a sandwich is enough to fill me up. But my kids can definitely feast on a full sandwich any time of the day! 

This Grilled Chicken Club Sandwich is perfect for summer grilling, or a weeknight family dinner with the family. It is loaded, filling and absolutely yum!

A hearty dinner ready in 20 minutes! Enjoy this delicious club sandwich made with grilled chicken

Ingredients

  • Chicken Breast – 200 gms

  • Salt and Pepper as per taste

  • Garlic – 2-3 cloves, crushed

  • Oil

  • Mayonnaise – 4 tbsp

  • Garlic – 2-3 cloves, crushed

  • Pepper as per taste

  • Butter

  • Bread Slices – 6

  • Lettuce – a few slices

  • Tomato – 1, sliced

  • Eggs – 2

Directions

  • Slice the chicken thin and then rub some salt, pepper and crushed garlic all over it.
  • Heat some oil in a pan and grill the chicken till it is cooked and light brown on both sides. Let it rest for a while and then slice it thin.
  • Mix together the mayo, garlic and pepper and keep it aside. Fry an egg sunny side up on on both sides as desired. Season with some salt and pepper.
  • Apply some butter on both sides of the bread slices and toast it to golden brown. Apply the garlic mayonnaise on all pieces on one side. On the first piece, place a few lettuce leaves and add the chicken slices on top of it.
  • Place the second piece with mayonnaise side up. On this, place one or two pieces of lettuce and arrange some tomato slices on top.
  • Sprinkle some salt and pepper on the tomatoes. Place the fried egg on top of this and then place the third slice of bread with the mayonnaise side down on top.
  • Gently press it down. Secure it with toothpicks and then cut it into 2 or 4 triangles.
  • Make another sandwich in the same way and serve with some ketchup.
