Having well balanced meals through the day is extremely important to keep your energy levels up and improving your overall health. Parina from NEIKI keeps stressing on this point again and again. In fact, she says that most of us are actually eating less than what our body needs.

When it comes to a snack in between meal times or a starter before you dive in to the main course, a salad is perfect. And if I have to choose a vegetarian salad option, a watermelon and feta salad tops the list. This recipe has been curated by Parina and she has also shared the nutritional information for the same.

Watermelon, Feta and Cucumber Salad

A colorful and nutritious meal!

Ingredients

  • Watermelon – ½ of a watermelon, cut into cubes

  • Cucumber – 1 or 2, cut into cubes

  • Red Onion – 1, sliced thin

  • Balsamic Vinegar – 2 tbsp

  • Salt – as per taste

  • Lemon juice – 1-2 tsp (optional, adjust as per taste)

  • Feta Cheese – 40 gms

  • Pine nuts, Walnuts to garnish – 10 gms

  • Cranberries to garnish – 5 gms

Step by Step Process

  • Mix the watermelon pieces, cucumber and red onion together in a salad bowl.
  • To this, add the balsamic vinegar and salt and mix well.
  • Next add lemon juice (if using) and mix.
  • Add the feta cheese and mix lightly.
  • Finally toss in the nuts and cranberries and serve cold.

Notes

  • Lemon Juice: Since we are already using balsamic vinegar in the dressing, check for taste before adding lemon juice. It is a personal preference.
