This super fresh corn salad recipe is bursting with fresh-from-the-garden goodness. This salad features fresh sweet corn, onion, green bell pepper, tomato, tossed in a simple dressing. It goes well with grilled options and balances out heavier main dishes. I think it would look cute as an appetizer, served in small glasses or ramekins as well.
The vegetables you add to this salad can be easily customized as per your choice and liking. I have kept the flavours really simple, but you can always alter it with a dressing that you prefer. These also taste great with a side of nachos

minutesI’m a big fan of raw sweet corn, but you could grill your corn first if you’d like some smoky flavor. This corn salad recipe is delicious either way.
Ingredients
Sweet Corn Kernels – 1 cup, boiled
Onion – 1 small, finely chopped
Tomato – 1 small, finely chopped
Green Bell Pepper – ¼-½ piece, finely chopped
Cucumber – ½, cubed
Coriander Leaves – a few, chopped
Red Chilli Flakes – ¼ tsp
Lemon Juice – as per taste
Salt – ¼ tsp (adjust as per taste)
Freshly Ground Pepper – as per taste
Directions
- Boil the sweet corn kernels with some salt, drain it and keep it aside for cooling.
- Meanwhile, chop an onion, a tomato, a small piece of green bell pepper and cucumber.
- Add the chopped onion, tomato, bell pepper and cucumber to the boiled sweet corn along with some coriander leaves.
- Add red chilli flakes, lemon juice, salt and pepper to this and mix well. You can serve this warm or cold!
