Eggs – 4
Onion – 1, chopped fine
Carrot – a small piece, chopped fine
Capsicum – a small piece, chopped fine
Green Chilli – 2, chopped fine
Coriander Leaves – 1 tbsp, chopped fine
Instant Cooking Oats – 1 tbsp
Salt and Pepper as per taste
Oil for cooking
Directions
- Whisk eggs together in a bowl.
- To this, add the onion, capsicum, green chilli, coriander leaves, oats, salt and pepper and whisk well.
- Add oil to a pan and once it heats up, add the egg mixture. Let it cook on low-medium heat till the bottom is slightly brown and the edges look done.
- Flip and cook the other side also. Serve hot with a side of toasted bread and ketchup.
