Salads are a welcome meal for me anytime of the day. I like salads as in between fillers as well as a full meal when I want to keep it light. Greek salads are usually mild and balanced in flavours. And the addition of feta cheese definitely makes it all the more interesting.
I like the fact the ingredients of this salad can be tailored well for a Greek salad or for an Indian salad. Skip the feta cheese and replace the salad dressing with some Indian ingredients like a mint chutney, and you have a totally different variant of this salad. But for this recipe, let us stick to the Greek version..:)
For me salad recipes are always an idea that you need not follow to the T. You can always alter salad ingredients as per what you have available with you and toss in the salad dressing. Greek Chickpea Salad

Ingredients
- For the salad
Boiled Chickpeas – 2 cups
English Cucumber – 1, peeled and chopped
Onion – 1 small, finely chopped
Cherry Tomatoes – 10-12, halved
Avocado – 1, sliced
Coriander leaves – 1/4 cup, chopped
Feta cheese – 100 gms, cut in cubes.
- For the dressing
Olive Oil – 2 tbsp
Lemon Juice – 2 tbsp
Garlic – 2 cloves, crushed
Salt – 1/2 tsp, adjust as per taste
Freshly ground black pepper
Directions
- In a bowl, mix together the olive oil, lemon juice, garlic, salt and pepper.
- To this, add the chickpeas, cucumber and onions and mix well.
- Next, add the soft ingredients – tomatoes, avocado and coriander leaves and toss.
- Finally, add the feta cheese cubes and serve.
