Ingredients
Olive Oil – 1 tbsp
Garlic – 2-3 cloves, thinly sliced
Tomato – 2 medium, chopped
Basil Leaves – a few, chopped
Vinegar – 1/2 tbsp
Salt – as per taste
English Cucumber – 2
Feta cheese and basil leaves for garnish
Directions
- Heat oil in a pan, add garlic and fry till golden brown. Keep it aside to cool down.
- Into a bowl, add chopped tomatoes, basil leaves, vinegar, salt and the oil with fried garlic. Mix it well.
- Cut cucumber into about a cm thick piece and place the tomato mix on it. Else, slice cucumbers into about an inch thick piece and scoop out a little from the centre. And then put the tomato mix into it.
- Top with some crumbled feta cheese and basil leaves and serve as a cold appetizer.
