A delicious and healthy vegan stir fry recipe…

Ingredients

  • Green Chilli – 1, chopped

  • Garlic – 8-9 cloves, chopped fine

  • Ginger – 1/4-inch piece, chopped fine

  • Soy Sauce – 1 tbsp

  • Tomato Ketchup – 2 tsp

  • Red Chilli Sauce – 2 tbsp

  • Tofu – 200 gms

  • Oil – 2-3 tsp

  • Red and Yellow Bell Pepper – 1/2 each, cubed

  • Water – 1/4 cup

  • Salt – as per taste

  • Cornflour – 1 tsp

  • Spring Onion Greens – a few, chopped

  • White Sesame Seeds

Directions

  • Mix together green chilli, garlic, ginger, soy sauce, tomato ketchup and red chilli sauce together.
  • Add the tofu into this and mix well.
  • Heat oil in a pan and add just the tofu pieces into it and fry lightly. Remove it from heat.
  • Add some oil to the pan and add the chopped bell peppers. Saute on high flame for a couple of minutes.
  • Add the remaining marinade into this and fry for 2 minutes. Add water to it along with salt, if needed and let it come to a boil.
  • Add the tofu pieces to it and let it all boil together for a minute.
  • Mix the cornflour together with some water and add it to the gravy. Let it thicken.
  • Add spring onion greens and sesame seeds and toss it well.
  • Serve it with some steamed rice or boiled noodles and enjoy!
