Ingredients
Rolled Oats or Instant Oats – 1 cup
Oil/Ghee – 1-2 tsp
Mustard Seeds – ½ tsp
Curry leaves – a few
Ginger – ¼-piece, finely chopped
Cashew/Peanuts – 1-2 tbsp
Green Chilli – 1-2, split
Onion – 1 small, chopped
Carrot – ½ chopped
Capsicum – a small piece, chopped
Green Peas – 2 tbsp
Salt – as per taste
Turmeric Powder – ¼ tsp
Hot Water – 1 cup for rolled oats / ½ cup for instant oats
Lemon Juice – from ½ lemon
Coriander leaves – 1-2 tbsp, chopped
Directions
- Add oats to a pan or kadai and dry roast it for a couple of minutes. Remove it from heat and keep it aside.
- Add oil or ghee to the same kadai. Once it heats up, add the mustard seeds and curry leaves let it splutter.
- Add the ginger to this and cook till its fragrant and starts changing color. Add the cashews/peanuts and fry till they start browning.
- Next, add the onion and cook till its translucent. Add the carrots and green peas along with the salt and turmeric powder and give it a quick mix. Cover and cook for a couple of minutes till the vegetables are partially cooked.
- Next, add the hot water and let it come to a boil.
- Add the rolled oats and once the water is almost absorbed, cover and cook for a couple of minutes till all the moisture is absorbed.
- Add the lemon juice and coriander leaves and mix well.
- Serve hot!
