Bread is almost like a savior when I do not have anything else to serve for breakfast. You can make so many different things using bread. This bread upma is one recipe I make when I want to give a complete make-over to bread. Or if I have some dry or stale bread that I want to re-use. Most of the times, dry bread goes into making my homemade bread crumbs, but if I already have enough stock of bread crumbs, then this Masala Bread Upma is what I make for breakfast or evening snack.
The recipe I am sharing here is a very basic recipe, which you can tweak as per your choice of ingredients and what you have available with you. Vegetables like carrots, beans and even mushrooms will go well in this recipe. I have added some of our common Indian spices to give it a little kick, but you can keep it really plain and simple and may be add some tomato ketchup at the end if your kids prefer that.
This Masala Bread Upma makes for a great tiffin box snack as well. You can use whole-wheat or multi-grain bread instead of white bread to make it healthier. I like to add some peanuts or cashews for an added crunch in this, but that is completely optional.

Ingredients
Oil – 2 tsp
Mustard Seeds – 1/2 tsp
Cumin Seeds – 1/2 tsp
Curry Leaves – a few
Green Chilli – 1, slit
Onion – 1 large, sliced
Tomato – 1 large, chopped
Green Peas – 1/4 cup
Red Chilli Powder – 1/2 tsp
Turmeric Powder – 1/4 tsp
Amchur Powder – 1/4 tsp
Salt – as per taste
Water
Toasted Bread Slices – 8, diced
Roasted Peanuts/Cashews – 2 tbsp
Coriander Leaves
Directions
- Heat oil in a kadai. Add mustard and cumin seeds to it along with curry leaves and let it splutter.
- Add green chilli and saute for a couple of seconds.
- Add onion to this and cook till onion starts changing color. Add the chopped tomato and green peas and cook it till soft.
- To this, add chilli powder, turmeric powder, amchur powder and salt and cook it well. Add a little water and let it simmer.
- Next, add the bread pieces and toss it all well. Cover and cook for 7-8 minutes till the bread softens and absorbs the flavours.
- Finally add the roasted nuts and coriander leaves and serve.
