Spicy Tempeh Szechuan Fried Rice for the win!

Ingredients

  • For the marination
  • Natural Tempayy Cubes – 200 gms

  • Soy Sauce – 2 tsp

  • Salt and Pepper as per taste

  • For the fried rice
  • Oil – 2 tbsp

  • Spring Onion Whites – 2 tbsp, chopped

  • Salt as per taste

  • Carrots – 1 small, diced small

  • Beans – 3-4, diced small

  • Bell Pepper – 2 tbsp, chopped fine

  • Szechuan Sauce – 2-3 tbsp (adjust as per taste)

  • Soy Sauce – 1/2 tbsp

  • Salt and Pepper as per taste

  • Cooked Rice – 3 cups

  • Spring Onion Greens – 2 tbsp, chopped

Directions

  • Add the soy sauce, salt and pepper to the Tempayy cubes and keep it aside for 10 min. (Skip this step if using Szechuan marinated Tempayy cubes).
  • Heat a little oil in a kadai and stir fry these marinated cubes and keep them aside.
  • In the same kadai, add the remaining oil.
  • Add the spring onion whites to it along with some salt and saute for a couple of minutes.
  • Add the carrot and beans and stir fry on high heat till almost cooked.
  • Add the capsicum and stir fry for another couple of minutes.
  • To this, add the prepared Szechuan sauce, soy sauce and Tempayy cubes and mix well.
  • Add the cooked rice to this and mix everything thoroughly.
  • Season with salt and pepper as needed.
  • Garnish with spring onion greens and serve hot.
