Once you prep your ingredients, it hardly takes time to come together. Mix it all together in your serving bowl and you have your salad ready – and of course less vessels to clean too..;)
This Papaya and Peanut Salad gets it’s freshness from vegetables like papaya, carrots and cucumber and a crunch from roasted peanuts. It has good fats from the peanut butter and has a very easy and tasty dressing in which you toss in all the vegetables.
Salads are a good way to increase the quantity of fiber in your daily meals. They are also a great option for intermediate snacking, thus reducing the binge eating at meal times.

Ingredients
- For the Dressing
Lemon Juice – 2 tbsp
Peanut Butter – ¼ cup
Honey – 1 tbsp
Salt – as per taste
Chilli flakes – 2 tsp
- For the Salad
Papaya – 250 gms, grated coarse
Carrot – 2 medium size, grated coarse
Cucumber – 1 small, chopped
Pomegranates – ¼ cup
Lettuce – a few leaves, chopped
Roasted peanuts – ½ cup, skin removed
Directions
- In a bowl, mix together all the ingredients for the dressing till it’s well incorporated.
- Add all the ingredients for the salad into the dressing, except the lettuce and peanuts.
- Mix it all well.
- Finally, add the lettuce leaves and peanuts and give it a good stir and serve.
