Ingredients
Ghee – 1-2 tbsp
Cashews – 1-2 tbsp
Raisins – 1-2 tbsp
Carrots – 2 cups, grated (about 400 gms)
Dates – 12-14, pitted and chopped
Milk – 1 cup
Salt – a pinch
Cardamom Powder – ¼ tsp
Directions
- Heat ghee in a kadai and fry the cashews till golden brown. Remove them from heat and add the raisins and fry till plump. Remove this too and keep it aside.
- Into the same ghee, add grated carrots and dates and cook till fragrant.
- To this, add the milk and cook till the milk is well absorbed by the carrots and they are cooked through.
- Finally, add a pinch of salt and some cardamom powder along with half of the fried cashews and raisins and mix well.
- Turn off the heat. Serve this hot or cold, garnished with the remaining fried fry fruits.
