Ingredients
Eggs – 2, hard boiled
Mayonnaise – 1 tbsp
Onion Powder – 1/4 tsp
Chilli Flakes – 1/4 tsp
Salt and Pepper – as per taste
Spring Onion – 1 stalk, chopped
Bread Slices – 4, toasted
Lettuce leaves
Directions
- Separate the egg yolk and white of the boiled eggs.
- Mash the egg yolk. Add mayonnaise, onion powder, chilli flakes, salt, pepper and chopped spring onion green and white together into it and mix well.
- Chop the egg white into small pieces and mix into this as well.
- Keep a piece of lettuce leaf on a bread slice and place some of the egg mix on top of it.
- Place the other piece of bread slice and serve.
- Alternatively, you can assemble the sandwich and then toast the same on a pan or sandwich maker.
