Basundi 

Basundi is an Indian sweet dish, popular in the western states of Maharashtra and Gujarat and some parts of Karnataka. It is a sweet and thickened milk, which is flavoured with cardamom powder and dry fruits. Though the preparation of Basundi is similar to how Rabri is prepared traditionally, but this is not as thick in consistency as the Rabri.

During the Navratri fasting time, there are a lot of ingredients which are avoided by people observing these fasts. This dessert is perfect to be consumed during the fasting days when you are craving for something sweet.

A thick,creamy, milky delight makes for a perfect dessert.

Ingredients

  • Ghee – 1 tsp

  • Chironji – 2 tbsp

  • Full Cream Milk – 1 litre

  • Chopped Almonds – 2 tbsp

  • Sugar – 1/4 cup, adjust as per taste

  • Cardamom Powder – 1/8 tsp

  • Almond flakes, chopped pistachios for garnish

Directions

  • In a pan, add the ghee and roast the chironji and keep it aside.
  • Add milk to a heavy bottom pan and boil till it reduces to about half the quantity.
  • Keep stirring to ensure it doesn’t stick to the bottom of the pan.
  • Once its almost 1/3rd qty, Add the sugar along with half the roasted dry fruits and cook further till it thickens more and sugar is dissolved completely.
  • Add cardamom powder and mix well.
  • And turn off the heat.
  • Serve hot or cold, garnished with the remaining roasted dry fruits and some almond flakes.
