I have tried a healthier version of this by air-frying the corn kernels instead of deep frying them.
Air-Fried Crispy Corn is made by coating the boiled corn kernels with a blend of sauces and spices and coating them in a dry flour mix and dusting them well. At this stage you can either deep fry or air fry them. And once they are golden-brown and crunchy, add in your favourite seasonings, chopped vegetables and herbs and serve them before they turn soggy!

Air Fried Crispy Corn Chaat

Ingredients
Boiled Sweet Corn – 2 cups
Oil – 1 tbsp
Soy Sauce – 2 tsp
Salt –½ -1 tsp
Chilli Powder – 1 tsp
Ginger-Garlic Powder/Paste – ½ tsp (optional)
Corn Flour – ¼ cup
Rice Flour – 2 tbsp
All Purpose Flour – 1 tbsp
Onion – 1 small, chopped
Green Capsicum – ½ piece, chopped
Green Chilli – 1, chopped
Chaat Masala – ½ tsp
Amchur Powder – ½ tsp
Cumin Powder – ½ tsp
Salt and Pepper Powder – as per taste
Chopped Coriander Leaves
Directions
- Into the boiled sweet corn, add oil, soy sauce, salt, chilli powder, ginger-garlic powder/paste and mix well.
- In another bowl, mix together corn flour, rice flour and all purpose flour and mix well. Add this to the corn and toss it all well so that the corn kernels are well coated with the flour mix.
- Using a sieve, remove the excess flour from the corn kernel.
- Pre-heat the air-fryer at 180C for 5 min. Line the air-fryer basket with aluminum foil or a paper/silicon liner if needed.
- Add the corn to the air-fryer basket and air-fry at 180C for 15-18 min. Stir it around once or twice in between after 5-6 min. Once the corn kernels are golden-brown in color and crunchy, remove it from the air-fryer and let it cool down for a couple of minutes.
- Into a bowl, add chopped onion, capsicum, green chilli, chaat masala, amchur powder, cumin powder, salt and pepper and mix well. Add the air-fried corn to this and mix well.
- Finally, add some chopped coriander leaves and mix it all together and serve.
