A healthy and pretty looking pasta recipe!

Ingredients

  • Walnuts – 2 tbsp

  • Butter – 1 tbsp

  • Olive Oil – 1 tbsp

  • Garlic – 5-6 cloves, sliced

  • Onion – 1 small, sliced

  • Beetroot – 150 gms, sliced

  • Balsamic / Regular Vinegar – 2 tsp

  • Basil Leaves – a few, chopped

  • Salt & Pepper as per taste

  • Cheese – 2 cubes, roughly chopped

  • Spaghetti – 150 gms, cooked

  • Crumbled Feta Cheese

  • Basil Leaves for garnish

Directions

  • Heat a pan and toast the walnuts. Keep it aside.
  • Add butter and oil into a pan and once hot, add garlic, onion and beets to it along with vinegar, basil leaves, salt and pepper.
  • Roast this on medium heat till the beetroot slices are roasted well.
  • Once well roasted, remove from heat and let it cool down a little. Transfer the mix to a blender jar and add the toasted walnuts, cheese and some water and blend well.
  • Transfer this back to the pan and cook for a couple of min.
  • Add cooked spagheti or any other pasta of your choice and mix well. Top it with some feta cheese and basil leaves serve.
