Szechuan Chicken Fried Rice

A super popular & most loved dish of Indo-Chinese cuisine is the Schezwan Chicken Fried Rice. It is very easy to make and its absolutely hot, spicy & irresistible. You can adjust the spice level according to your taste buds by reducing the quantity of schezwan sauce.

This chicken fried rice doesn’t need any accompaniment and tastes great on its own. A big bowl of Szechuan Chicken Fried Rice never lets you down, because it is tasty, healthy and super-quick to put together! One of the best part about this rice stir-fry is that you can easily customize it by adding your favourite vegetables, which also adds more colour, nutrition and texture to the dish.

I have used the store bought Szechuan sauce for this recipe, however you can also use a home made version for this.

Hot, spicy & irresistible – Schezwan Chicken Fried Rice!


  • For Marination
  • Boneless Chicken – 200 gms, cut into small pieces

  • Soy Sauce – ½ tbsp

  • Szechuan Sauce – ½ tbsp

  • Red Chilli Powder – ½ tsp

  • Salt and Pepper as per taste

  • For the fried rice
  • Oil – 1-2 tsp

  • Spring Onion Whites – 2 tbsp, chopped

  • Salt – as per taste

  • Carrots – 1 small, diced small

  • Bell Pepper – 2tbsp, finely chopped

  • Szechuan Sauce – 3 tbsp

  • Soy Sauce – ½ tbsp

  • Salt and Pepper as per taste

  • Cooked Rice – 3 cups

  • Spring Onion Greens – 2 tbsp, chopped


  • In a bowl, mix together the chicken pieces with soy sauce, Szechuan sauce, red chilli powder, salt and pepper. Keep this aside for 15-20 min while preparing the rest of the ingredients for the fried rice.
  • In a wok or kadai, add some oil. Saute the spring onion whites along with some salt for a couple of minutes.
  • Add the marinated chicken pieces to this and cook it on high flame, while continuously stirring. The chicken should be cooked through and dry.
  • To this, add the carrot and bell pepper and stir fry on high flame till almost cooked.
  • To this, add the Szechuan sauce and soy sauce and mix well. Add the cooked rice to this and mix everything thoroughly. Season with some salt and pepper.
  • Garnish with spring onion green and serve hot.
