Spinach and Potato Casserole is a simple dish that can be served as a main or side dish. It is actually a fantastic one-dish meal, and can be served with a side of some toasted bread.

What I love about this Spinach and Potato Casserole is that all the pre-prep needed for this can be completed earlier. I like to do this over the weekend and keep it refrigerated. That ways for a quick week-night dinner, all I need to do is to add the liquid ingredients and bake it. In 45 min, my dinner is ready in the oven, while I can sit back and relax!

And did I tell you – just in case you have some leftovers, you can refrigerate it and reheat and have it later. So sometimes I do make a larger batch, just to have some leftovers for the following day..;)

A simple baked dish – serve this Spinach and Potato Casserole with some toasted bread and you have a complete meal!

Ingredients

  • Butter – 1 tbsp

  • Garlic – 3-4 cloves, chopped

  • Onion – 1 small, diced

  • Salt – as per taste

  • Potato – 2 small, sliced

  • Spinach – 125 gms, roughly chopped

  • Thyme – 1/2 tsp

  • Eggs – 4

  • Milk – ¼ cup

  • Nutmeg Powder – 1/8 tsp

  • Chilli Flakes – ½ tsp

  • Thyme – ½ tsp

  • Salt and Pepper – as per taste

  • Mozarella Cheese – ¼ cup, grated

  • Cheddar Cheese – ¼ cup, grated

Directions

  • Preheat the oven at 200C for 15 min.
  • Add butter into a pan and to this add the garlic. Fry this till the garlic if fragrant. Add the onion along with the salt and cook it till the onion starts browning. Add the potato and cook it till the potato is partially done. Add the spinach to this along with the thyme and let it wilt and cook down. Cook on high flame so that all excess water evaporates.
  • In a bowl, whisk together the eggs, milk, nutmeg powder, chilli flakes, thyme, salt and pepper. Add half of the grated cheese to this. In a baking disk, add the cooked spinach and potato mix and then add the egg mix on top. Mix it gently. Cover this with an aluminium foil and cook it covered for 30 min or more, if needed, till it is mostly set. Bring it out of the oven, remain the foil cover and sprinkle the remaining grated cheese on top. Bake this uncovered for 7-10 min till the cheese melts and the top is slightly golden-brown. Serve hot.
