
Mini Vegetable Sandwich
These delicious, creamy and healthy vegetable mini sandwiches are perfect to pack in your little one’s tiffin box. They are also a great breakfast and mid-day snack option. With these vegetable sandwiches, you can be rest assured that you are serving something healthy to your loved ones.
Sandwiches are common and easy breakfast option for many. This sandwich recipe skips mayonnaise and cheese and replaces it with healthier alternatives, without compromising on the creaminess or taste of the filling. You can use whole wheat or multigrain bread as well to make it even more healthier. If your little ones prefer a non-veg version, then you can add some boiled and shredded chicken in the filling too. You can add other vegetables or choice too.

Bite size or mini sandwiches are great to serve as a starter in parties or with the evening tea too. When making for kids, you can add some garnishes on top to make it even more interesting!

Ingredients
Hung Curd – 1/2 cup
Carrot – 1 small, grated
Cucumber – a small piece, chopped
Colored Bell Pepper – 2-3 tbsp, finely chopped
Salt – as per taste
Powdered Sugar – 1/4 tsp
Pepper Powder – 1/4 tsp
Bread (White/Brown) – 6 slices
Cucumber, Carrot, Olives for garnish
Directions
- In a bowl, add the hung curd along with carrot, colored bell pepper, salt, sugar and pepper. Mix it all well.
- Trim the edges of the bread slices.
- Spread the filling between 3 slices of bread to make a sandwich. Cut into 4 pieces.
- Insert a piece of cucumber and carrot on a toothpick and secure the sandwich with it.
