Hung Curd – 1/2 cup
Carrot – 1 small, grated
Cucumber – a small piece, chopped
Colored Bell Pepper – 2-3 tbsp, finely chopped
Salt – as per taste
Powdered Sugar – 1/4 tsp
Pepper Powder – 1/4 tsp
Bread (White/Brown) – 6 slices
Cucumber, Carrot, Olives for garnish
- In a bowl, add the hung curd along with carrot, colored bell pepper, salt, sugar and pepper. Mix it all well.
- Trim the edges of the bread slices.
- Spread the filling between 3 slices of bread to make a sandwich. Cut into 4 pieces.
- Insert a piece of cucumber and carrot on a toothpick and secure the sandwich with it.
I personally find vegetable mini sandwiches more presentable and appealing with its mini size shape. Hence it is an ideal recipe for any party or even for your next potluck party.
