Cheesy Vegetable Fingers is the perfect snack for your kids’ tiffin box, in which you can pack all the vegetables you wish too as well. It can also be served as a party appetizer. It is basically an alternative to the vegetable cutlet recipe – it is shaped like fingers. filled with some cheese, coated with breadcrumbs and then can be fried in oil or air-fried to make it a little heathier.

Cheesy Vegetable Fingers is the perfect snack for your kids’ tiffin box, in which you can pack all the vegetables you wish too as well.

Ingredients

  • Sweet Corn – 1/4 cup

  • Frozen Green Peas – 1/4 cup

  • Carrot – a small piece, chopped

  • Onion – 1 small

  • Green Chilli – 1, cut into few pieces

  • Ginger – a 1/4-inch piece

  • Garlic – 3-4 cloves

  • Oil

  • Potatoes – 2, boiled and mashed

  • Chilli Powder – 1/2 tsp (optional)

  • Cumin Powder – 1/2 tsp

  • Amchur Powder – 1 tsp

  • Schezwan Sauce – 2 tsp (optional)

  • Garam Masala Powder – 1/2 tsp

  • Salt – 1 tsp

  • Coriander Leaves – 2 tbsp, chopped

  • Bread Crumbs for binding (if needed)

  • Mozarella Cheese Sticks – 8 pieces

  • For coating and frying
  • All-purpose Flour – 1/4 cup

  • Water

  • Bread Crumbs – 1/4 cup

  • Oil for frying

Directions

  • In a food processor or vegetable chopper, add sweet corn, peas, carrot, onion, green chilli, ginger and garlic and chop finely. In a pan, heat some oil.
  • To this, add all the chopped vegetables and saute on high flame till partially cooked. Add the mashed potatoes along with chilli powder, cumin powder, amchur powder, schezwan sauce, garam masala, salt and coriander leaves. Mix it all well. Turn off the heat. If the mix looks very soft or wet, add some bread crumbs to bind it together.
  • Once the mixture cools down a little, take small balls and shape into a long finger. Press a piece of cheese stick in the center and cover it properly with the vegetable mix. Make all the vegetable fingers like this.
  • Make a slurry with flour and water. Dip the vegetable fingers in the flour slurry to coat it properly and then roll it in the bread crumbs. Deep fry, shallow fry or air fry these vegetable fingers and serve it with some ketchup.
