
Green Peas Salad
Green Pea Salad is a quickly prepared recipe, and is always juicy and crunchy at the same time. You can make it ahead in time and keep it refrigerated. It is a healthy lunch option, or can be used as a cold dinner salad. A great option for potlucks too!

I have kept this green pea salad simple with just the addition of cheddar cheese and egg. However, you can go ahead and add bacon bits or chicken or any other meat you have in hand to make it even more delicious. The best part about this recipe is that I have replaced the mayo dressing with a healthier and more nutritious dressing using Greek Yoghurt. And trust me – you will not miss the mayo in this one!

minutesThis easy green Pea Salad is an old fashioned classic recipe served cold and enjoyed all year round.
Ingredients
Fresh/Frozen Green Peas – 1 cup
Salt – ½ tsp
Boiled Egg – 1
Cheddar Cheese – ¼ cup, cut into small cubes or grated
Onion – 1 small, cut into small pieces
- For the dressing
Greek Yoghurt – ¼ cup
Fresh Cream – 1 tbsp
Yellow Mustard – ½ tsp
Honey – ½-1 tsp
Vinegar – 1 tsp
Olive Oil – 1 tsp
Salt and Pepper as per taste
Directions
- Boil some water and add the peas into it along with some salt.
- Boil for 5 min and drain off the water.
- Add it to cold water to stop the cooking, drain and keep aside.
- Alternately, add the peas into some water along with some salt and microwave it for 30-60 sec.
- Drain off the water and keep aside.
- Cut the boiled egg and cheese into cubes.
- The cheese can either be grated or cut into sizes similar to the size of peas.
- For the dressing, into the Greek yoghurt, add the cream, mustard, honey, vinegar, olive oil, salt and pepper and mix well.
- To this, add the green peas, egg, cheese and onion and mix well.
- Refrigerate the salad and serve it cold.
