Sukhadi

Sukhadi or Gud Papdi or Gol Papdi is a traditional Gujarati sweet which is made all through the year in Gujarati homes. It uses three basic ingredients that we will all have in our pantry. Other ingredients like sesame seeds, dry fruits etc are added as per personal choice and taste.

Sukhadi is a sweet made using whole wheat flour and jaggery and is cooked in ghee or clarified butter. The roasting of the flour to the correct color and consistency is the only time consuming task in this recipe. This also stays well at room temperature for a couple of days provided it doesn’t get all consumed in a day or two..:)

An easy to make Gujarati sweet dish using very basic ingredients.

Ingredients

  • Ghee – ½ cup (might not need whole quantity)

  • Whole Wheat Flour – 1 cup

  • Jaggery (grated) – ½ cup

Directions

  • In a pan, add about quarter of the ghee and let it melt.
  • Add the whole wheat flour to the ghee and keep roasting it, stirring continuously. The flour will slowly feel light and start changing color along with a nice nutty aroma. This may take about 7-8 min on low to medium flame.
  • At this stage, add some more ghee and continue roasting till the flour changes further color. The aroma will be much stronger at this stage. Add more ghee only if the mixture looks very dry.
  • At this stage, turn off the heat.
  • Take the pan off heat and then add the grated jaggery and mix it well.
  • The residual heat will melt the jaggery and it will mix well with the flour mix. Mix till all the jaggery is melted and mixed well with the flour.
  • Transfer this onto a greased plate and press it well. Using a knife, make cuts for the sukhadi and then let it cool down completely.
  • Once it cools, cut the sukhadi along the earlier marked cuts and store it in an air-tight container.
