Healthy Fruit Salad

What’s not to love about some fresh cut fruits with a dollop of ice-cream or custard?? But if you are looking on options on how to make this dessert really healthy too, then I have the perfect recipe for you. With the summer months coming, it is always good to indulge in desserts which don’t make you feel all bloated up.

The choice of fruits you use in a fruit salad is purely personal. I prefer not to use fruits like banana or chickoo which become mushy after a while. I like the fruits to retain their crunch even after they are served after being refrigerated. So my choice of fruits usually are apples, grapes, pineapples, orange, kiwi and if you have some berries, then they work great too.

And when it comes to the topping for a fruit salad, I love adding some nuts and seeds. Not only does it give an added crunch, but it also increases the nutritional quotient. So what is the replacement for ice-cream or custard in my fruit salad recipe?? It is Greek Yoghurt. It has the creaminess that goes perfectly with the crunchy fruits, isn’t as sour as regular yoghurt and is high on proteins and low in fat. So that’s a win-win for me. However, if you do not have Greek Yoghurt, then by all means replace it with lightly beaten hung curd!

A healthy dessert option with the goodness of fruits and yoghurt!

Ingredients

  • Apple – 1, chopped with the skin

  • Pomegranate – ¼ cup

  • Kiwi – 1, chopped

  • Green /Black Grapes – ¼ cup, halved

  • Orange – 1 peeled, deseeded and chopped

  • Lemon Juice – 2 tsp

  • Honey – 2-3 tsp

  • Greek Yoghurt / Hung Curd – ½ cup

  • Chopped nuts and seeds of choice for garnish

Directions

  • Chop all the fruits and keep it refrigerated separately till ready to serve. You can add a little lemon juice to the fruits to prevent discoloration. The fruits will slowly release some of their juices and soak in that.
  • Mix together yoghurt and honey and keep it refrigerated too. In case you are using hung curd, you may want to increase the quantity of honey.
  • At the time of serving, mix together all the fruits with the remaining lemon juice and 1 tsp of honey. Transfer this to serving bowls, and top it up with the sweetened yoghurt.
  • Garnish with some chopped nuts and seeds as per your choice.
  • This dessert tastes best when served cold!
