Russian Salad

Salads are a welcome meal any time for me..:) And I personally prefer food that isn’t too high on spices, but instead have a balance of flavours. So salads just work great! For those who like a creamy base in their salads, Russian Salad is a great option. You can leave out the chicken and make it a vegetarian salad. It uses cooked vegetables, but which still have some crunch in them. Pineapple is another addition in this which I personally love. It adds to that sweet and tangy flavour of the salad.

An easy peasy creamy salad recipe.

Ingredients

  • For the salad
  • Chicken – 250 gms, boiled and cut

  • Carrot – 1 small, cubed

  • Green Peas – ¼ cup

  • Green Beans – 6-8, chopped

  • Yellow/Red pepper – ½, chopped

  • Pineapple – ¼ cup, chopped

  • Milk – if needed

  • For the dressing
  • Greek Yoghurt – ½ cup

  • Fresh Cream – 2 tbsp

  • Yellow Mustard – 1 tsp

  • Honey – 1 tsp

  • Vinegar – ½ tbsp

  • Olive Oil – ½ tbsp

  • Salt and pepper – as per taste

Directions

  • Boil together carrots, peas and beans in some water along with salt. The vegetables should retain their crunch. Drain it and keep it aside.
  • In a bowl, mix together all ingredients for the dressing and keep it aside. You can replace the greek yoghurt, mustard and honey with some mayonnaise too.
  • Into the prepared salad dressing, add the cooked chicken, vegetables, bell pepper and pineapple and mix well.
  • If the salad looks too dry, add a little milk and mix well.
  • Serve cold.
