Papaya and Peanut Salad

Salads are a quick fix meal. You can either have them as a starter or pair it with a bread and make it a wholesome and full meal too. Once you prep your ingredients, it hardly takes time to come together. Mix it all together in your serving bowl and you have your salad ready – and of course less vessels to clean too..;)

This Papaya and Peanut Salad gets it’s freshness from vegetables like papaya, carrots and cucumber and a crunch from roasted peanuts. It has good fats from the peanut butter and has a very easy and tasty dressing in which you toss in all the vegetables.

Salads are a good way to increase the quantity of fiber in your daily meals. They are also a great option for intermediate snacking, thus reducing the binge eating at meal times.

A healthy and tasty option as a full meal or as an intermediate meal!

Ingredients

  • For the Dressing
  • Lemon Juice – 2 tbsp

  • Peanut Butter – ¼ cup

  • Honey – 1 tbsp

  • Salt – as per taste

  • Chilli flakes – 2 tsp

  • For the Salad
  • Papaya – 250 gms, grated coarse

  • Carrot – 2 medium size, grated coarse

  • Cucumber – 1 small, chopped

  • Pomegranates – ¼ cup

  • Lettuce – a few leaves, chopped

  • Roasted peanuts – ½ cup, skin removed

Directions

  • In a bowl, mix together all the ingredients for the dressing till it’s well incorporated.
  • Add all the ingredients for the salad into the dressing, except the lettuce and peanuts.
  • Mix it all well.
  • Finally, add the lettuce leaves and peanuts and give it a good stir and serve.
