Flourless Chocolate Peanut Butter Muffins

If you have been following me and have read some of my past recipes, you may already know that I have a major sweet tooth. Sweets are one thing that I find really difficult to resist. So if someone offers me a sweet which doesn’t have empty calories and has some essential macro nutrients, you can imagine my joy…:)

When me and Parina were discussing the recipes for the Jan balanced meal series, I was very clear that I wanted to have healthy sweets as part of the Theme Thursday recipes (All my Thursday recipes for a month follow a particular theme – either the same category of food or a common ingredient). We started with the Gluten Free Fresh Fruit Tart, followed by Protein Cake and Oats Kheer. This flourless chocolate and peanut butter muffins are the last in this series. These muffins are truly sponge like and if you use over-ripe bananas, you may not need a sweetener like honey in this. These are again very easy to make and you should definitely give it a try.

Flourless Chocolate Peanut Butter Muffins

A delicious and sponge like flourless chocolate muffins!

Ingredients

  • Banana – 2 (about 250 gms)

  • Peanut butter – 150 gms

  • Egg – 2

  • Baking soda – 1/2 tsp

  • Cocoa powder – 4 tsp

  • Vanilla essence – 2 tsp

  • Honey – 4 tsp (adjust as per the sweetness of bananas and personal preference)

Directions

  • Preheat the oven to 180C.
  • Line a muffin tray with liners and keep it aside.
  • In a mixing bowl, mash the bananas well.
  • Next, add the peanut butter and egg and whisk together. I use my homemade peanut butter for this recipe. I also prefer making the peanut butter crunchy so there are small pieces to bite in the muffins as well.
  • Add the cocoa powder, baking soda, vanilla essence and honey to this and mix well.
  • Pour the batter into the prepared muffin tray immediately and bake for 20-25 min at 180C till top looks done and skewer inserted comes clean.
  • Take off the muffins from the muffin tray and leave it on a cooling rack to cool completely. You can make 10 medium size muffins using this recipe.
