Keto Chicken Popcorn

Don’t movies and popcorn go hand in hand?? But what if you are tired of regular popcorn and want something different? Well, that’s when chicken popcorn comes to the rescue… And if you are on a keto diet, I have the perfect keto chicken popcorn recipe for you..:) I am sure this will be a hit with kids and adults alike.

My recipe for chicken popcorn ensures that the chicken pieces are really tender and juicy when you bite into them. So do go through the recipe in detail and watch the video to learn how to do it.

Few things to keep in mind

  • Marination of chicken: If you have the time, then leave the chicken for marination overnight or for 8-10 hours. This is what makes the chicken really juicy and tender. This little bit of planning will ensure you have some delicious chicken popcorn when you make it.
  • Spices: I have kept the spice flavours to what I like. But these can be changed and you can definitely make changes basis your choice.

Ingredient List

For marination

  • Chicken – 250 gms
  • Buttermilk – 1/4 cup (mix 2 tbsp curd with 2 tbsp water)
  • Salt – as per taste
  • Pepper – as per taste

For coating

  • Coconut Flour – 6 tbsp
  • Salt – 1/4-1/2 tsp
  • Garlic Powder – 3/4 tsp
  • Onion Powder – 3/4 tsp
  • Piri Masala – 3/4 tsp
  • Egg – 1
  • Salt – as per taste
  • Pepper – as per taste
  • Oil – for frying

Step by Step Process

  1. Marinate the chicken with the buttermilk, salt and pepper and leave it overnight, is possible. This makes the chicken juicy and tender.
  2. Mix together the coconut flour, salt, garlic powder, onion powder and piri piri masala together in a bowl and keep it aside.
  3. In another bowl, mix the egg together with some salt and pepper and lightly beat it together.
  4. Heat oil in a pan. Dip the chicken pieces in the egg first and then coat them in the dry coconut flour mix.
  5. Fry them in hot oil till golden brown in color.
  6. Serve hot with a mayo dip, green chutney and ketchup!
